Scalloped Potato Bake
My mom used to make 'scalloped potatoes' with ham and it was always so delicious. I never could repeat her recipes. And she was a cook who never wrote down recipes. It was always a pinch here and a dash there. So, I scour the internet trying to find recipes close to my mom's. This scalloped potatoe bake is pretty close. I added ham to it and I think cheddar cheese might have made it taste a little better. (I forgot to take a picture of it, so will next time I make it.)
3 tbsp. butter
3 tbsp. flour
2 c. milk
4 or 5 lg. potatoes (peeled and cut into slices)
1 lg. onion, chopped
1 c. cubed, cooked ham or bacon pieces
1 tsp. salt
1/4 tsp. pepper
4 c. shredded cheese (1 lb.)
Melt butter in saucepan over low heat, add flourand stir until smooth. Cook 1 minute while stirring constantly. Gradually stir in milk while cooking over medium heat until thickened.
Layer 1/2 potato slices, onion, ham, salt, pepper, cheese and whie sauce in order given. Repeat second layer. Cover and bake at 350 degrees for 1 hour and 15 minutes. In order to save time, potatoes can be cooked on stove also cheese can be melted in the white sauce.
